Simon emigreerde met zijn ouders naar Amerika in 1910, hij was toen 19 jaar oud. Hij heeft ongeveer een jaar in North Dakota gewoond daarna vertrok hij met 3 andere jonge mannen naar Oak Harbor-Washington, waar hij op verschillende boerderijen werkte. In 1917 nam hij dienst in het leger om zodoende automatisch de Amerikaanse nationaliteit te verkrijgen. Simon bleef 3 jaar in het leger. Hij vocht in Europa in WO-I (1914-1918). Na de oorlog bleef hij in Europa om Duitsers en Nederlanders te werven voor het leger.
Na zijn terugkomst in 1920 trouwde hij zijn jeugdliefde Lizzie Zylstra. Beiden werkten hard en kochten uiteindelijk hun eigen boerderij.
