De ingang van de brouwerij van Jan Graswinckel stond aanvankelijk onder de naam ‘De Tromp’ of ‘Muyl Tromp’ op de plek van het huidige pand Koornmarkt 55. In dat pand was hij in 1603 als brouwer begonnen, als zoon van de brouwer uit de ‘De Ruyt’ (het huidige Koornmarkt 73). De bedrijfsgebouwen stonden achter het woonhuis en liepen tot aan de Oude Delft, naast zijn nieuwe woning. Hij kocht dat bedrijf voor ƒ 3000 ‘gereed geld’ en daarnaast met een lijfrente van ƒ 309 per jaar, een merkwaardige speculatieve koopsom. Na aankoop doopte Graswinckel de brouwerij om in ‘Het Dubbele Anker’ en liet dat handelsmerk ook aanbrengen op het natuurstenen poortje in de Nickersteeg dat toegang gaf tot zijn bedrijfsterrein..
