Gregorius Celestyn Waterschoot werd op 27 september 1914 geboren in Oud-Turnhout.
Ingekleed in de abdij van Postel op 9 oktober 1932, verbond hij zich op 9 oktober 1934 door professie aan dit klooster.
Op 30 juli 1938 werd hij tot priester gewijd.
In oktober 1942 behaalde hij te Leuven de graden van licentiaat en doctorandus in de wijsbegeerte.
Hij behaalde een doctoraat in de filosofie en doceerde datzelfde vak in de norbertijnse studieconcentratie ‘Agripo’.
Vanaf 22 augustus 1942 was hij lector filosofie in de abdij en vanaf september 1969 in de norbertijnse studieconcentratie ‘Agripo’.
Op 17 december 1942 werd hij prior en van 1 april 1946 tot 20 augustus 1951 was hij tevens novicen en geprofestenmeester.
Op 4 december 1951 verkoos de abdijgemeenschap van Postel hem tot zestiende prelaat.
Op 27 december 1951 werd hij door kardinaal Van Roey tot abt gezegend.
Onder zijn bestuur vond de verdere restauratie van de abdij plaats en werd een bibliotheekvleugel bijgebouwd.
Van 1962 tot 1968 was prelaat Waterschoot ook circator van de Brabantse circarie. Hij was definitor van de orde van 1966 tot 1968.
Van 1968 tot 1970 circator voor de Franse circarie.
Op 1 mei 1985 nam hij ontslag als prelaat en op 24 juni 1999 als lector filosofie.
Hij overleed onverwacht in de Heilig Hartkliniek te Mol op donderdag 22 januari 2009.
Prelaat emeritus van de norbertijnenabdij van Postel en abtstichter van de norbertijnenpriorij van Kinshasa (Congo).
De plechtige uitvaartliturgie werdt gevierd in de abdijkerk van Postel op vrijdag 30 januari 2009 om 11.00 uur.
