Hij woonde tot aan zijn huwelijk met de Niet-Joodse Petronella Theodora Kollen in 1941 thuis bij zijn ouders op de Breede Hilledijk 161 a in Rotterdam. Na zijn huwelijk woonde hij volgens zijn registratiekaart van de Joodse Raad met vrouw en kind, wat in 1942 werd geboren, in de Comelinstraat 15 in Rotterdam. Levie Bierschenk voorzag in zijn levensonderhoud als fruitkoopman.
Levie Bierschenk was de enige Bierschenk met de aantekening V (Vught) op zijn registratiekaart.
Levie Bierschenk was tijdens de oorlog geïnterneerd in kamp Vught. Hij wist te ontsnappen, maar is later weer opgepakt.
Hij werd op 15 November 1943 met 1149 anderen vanuit Vught via Westerbork naar Auschwitz gedeporteerd. Dit was een transport van veel mensen in de werkzame leeftijd, mannen en vrouwen maar weinig kinderen en ouderen. Onder hen ook gemengd gehuwden en Mischlingen.
Door de demografische samenstelling van dit transport volgde na aankomst in Auschwitz géén selectie, mede omdat zij uit Vught kwamen. In Vught zaten de gevangenen meestal als straf, dus met een strafdossier. Zij waren individueel gearresteerd en niet met grote massale razzias of vanaf plekken zoals de Hollandsche Schouwburg in Amsterdam of Loods 24 in Rotterdam. Bij gevangenen als deze, die een strafdossier hadden, bestond het risico dat ooit van hogerhand of vanuit Nederland navraag naar zon individu zou worden gedaan. Daarom konden zij niet gelijk worden vergast.
Het transport ging zes weken in quarantaine en in Januari 1944 vond de eerste selectie plaats. Van de mannen, jonger dan 45 jaar die uit quarantaine kwamen, verdween een deel in dwangarbeid in Auschwitz-Birkenau en een deel naar de mijnen van Janina, Jawischowitz en Furstengrubbe. Voor al deze mannen die uit Auschwitz zijn weggevoerd óók Levie Bierschenk is na de oorlog door het Nederlandse Ministerie van Justitie een collectieve sterfdatum vastgesteld als op 30 Juni 1944 in Midden Europa.
