Na de dood van zijn leermeester Johann Martin Elßler nam Nikolaus Dopfer diens werkplaats te Mainz over. Elßler kreeg bij zijn eerste vrouw Anna Margareta Krück drie zoons en drie dochters. Bij zijn tweede vrouw Maria Barbara Hornung had hij vier dochters en een zoon.
