Op 27 april 1897 nam het echtpaar Johannes Adrianus Out en Anna Nooy de bakkerij over van bakker Kohlwey. Dit was inclusief de paardenstal en de bergschuur. Zij waren toen reeds in de leeftijd van 56 en 54 jaar. Zij hadden 7 zonen en 2 dochters.
De huurprijs van het pand bedroeg voor 1 jaar ƒ 500,00 dat in twee termijnen moest worden voldaan. De hele winkelinventaris werd ook voor ƒ 500,00 overgenomen. Na nog eens 4 optiejaren werd de bakkerij gekocht voor ƒ 6000,00. De bijgebouwen bleven in huur.
De zonen Tinus en Gerrit runden voornamelijk de winkel. Twee andere zonen Tinus en Gerrit ventten het brood uit. Zij waren toen pas 12 en 10 jaren jong. In 1904 verliet Gerrit de bakkerij en begon in Hillegom voor zichzelf. In 1907 verliet Tinus de bakkerij en opende een bakkerij in Hazerswoude. Zodoende moesten Ko en Kees de zaak runnen. In 1908 overleed bakker Out. Ko en Kees hadden hulp van hun zus(je) Marie. Tien jaar later overleed ook moeder Out en een zekere Jans Schouten nam het huishouden op zich om Ko en Kees te helpen. Beide broers besloten dat het beter was om ieder een eigen zaak te hebben. Via een notaris boden zij op de bakkerij en Ko kwam als beste bieder uit de bus. Broer Kees nam van het "uitgekochte" geld een bakkerij in Bennebroek over.
Ko Out huwde in 1920 Anna Helsloot. De bakkerij en het woonhuis werden totaal gerenoveerd. De bakkerij liep goed, mede doordat St Theresia Rustoord brood bij hen betrok.
Bakker Ko en zijn vrouw kregen 3 zonen en 1 dochter. De oudste, André, werd direct na de lagere school in de bakkerij geplaatst. Drie jaar later was de tweede zoon, Frans, aan de beurt. Dochter Ans had wel de naaischool mogen bezoeken, maar moest daarna toch in de winkel komen werken. De jongste zoon, Jan, mocht de 3-jarige Mulo doorlopen, maar werd vervolgens ook in de bakkerij te werk gesteld.
Gedurende de Tweede Wereldoorlog moest Ko de zaak met anderen runnen daar de zonen her en der waren gestationeerd. Na terugkeer werkte ieder ergens anders. Jan Out huwde en kwam in 1949 weer terug in de zaak, waar zus Ans nog werkzaam was. Frans was onder dienst in Indonesië en in die periode overleed zijn vader, bakker Ko Out. Vijftien jaar later overleed zijn echtgenote.
Jan en zijn vrouw To kregen 7 kinderen, 4 zoons en 3 dochters. In 1957 ter gelegenheid van het 60 jarig bestaan van de bakkerij, werd deze weer vernieuwd om zodoende met de tijd mee te gaan. Naast brood en banket werd nu ook Artic ijs verkocht - softijs. Het brood werd ondertussen met een bestelbusje rondgebracht.
Vanaf 1966 werd er regelmatig het een en ander verbouwd en vervangen. In 1975 was de winkel dusdanig, dat deze uniek was in de regio. Zoon Hans was inmiddels in de bakkerij aan de slag en tijdens het 80 jarig jubileum werd de naam van de bakkerij omgedoopt tot Out & Zoon. In 1984 overleed To Out, echtgenote van Jan. Zij was altijd actief geweest in de winkel met daarnaast de zorg voor het grote gezin. Op 1 januari 1989 droeg Jan de zaak over aan zoon Hans. Wel bleef hij actief tot 1993. In 1997 werd het 100 jarig bestaan van Bakkerij Out gevierd. Heden ten dage anno 2004 is de bakkerij nog steeds een welbekende zaak in Ouderkerk. De winkel is te vinden vlak naast de Kerk, in de - hoe kan het anders - Kerkstraat, op nummer 1.
