Aan het einde van de 16e eeuw heette de brouwerij die toen op deze plek van het huidige Voorstraat 38 en 40 stond Het Vliegend Hert, zo blijkt uit oude koopakten die te vinden zijn onder de losse aanwinsten van het gemeentearchief. In 1587 kocht Jacob Cornelisz Ackersloot de brouwerij.
Vanaf circa 1625 werd de brouwerij eigendom van Pieter Adriaensz Croeser (1594-1677), die van geen verloop in het Delftse bierbrouwen wil weten en de zaken groots aanpakt. Met hem veranderde de naam ook van ‘B’ in ‘P’, cq. ‘Gekroonde P’.
Burgemeester
Het ging Croeser niet alleen zakelijk, maar ook maatschappelijk voor de wind. In 1646 werd hij toegelaten tot het stadsbestuur en werd verschillende malen schepen en tenslotte in de jaren 1663 en 1664 ook burgemeester.
