Après avoir suivi une formation académique, notamment à l'Académie Royale des Beaux-Arts de Bruxelles et à l'Akademie der Bildenden Künste de Vienne, Joseph Probst commence à s'affirmer après la Seconde Guerre mondiale en adoptant les formes simplifiées et les couleurs vives de l'École de Paris.

Vers 1951-1952, l'artiste peint ses premières œuvres non-figuratives, d'abord marquées par l'abstraction géométrique et ensuite par l'abstraction lyrique à partir des années 1955-1956. Durant les années 1957-1970, la matière picturale et la liberté des formes prennent de l'importance dans sa démarche artistique.

En 1971, la peinture à l'huile est délaissée en faveur de l'acrylique, accompagnée de contours plus précis et d'un coloris plus éclatant. Au cours des années 1980-1984, l'inspiration vient des poèmes et des lieder ; à partir de 1984, la technique du pastel gras s'impose. En 1988, la santé de l'artiste ne lui permet guère que de réaliser des œuvres de petit format. Toutefois, en 1989-1990, les dimensions habituelles réapparaitront, et ce jusqu'à la fin de sa vie.
