Anna Catharine was born just two years after her parents immigrated from Germany to Pennsylvania. Johan Jacob Höck and Susanna Dorothea Hamme both immigrated from Germany to Lancaster County, Pennsylvania in 1748. Their marriage is recorded in the records of Trinity Lutheran Church in Lancaster in April 1749. In July of the same year, Johan Jacob's sister Anna Catharina married Susanna's brother Valentine Hamme.
Soon after her birth in 1750, Anna Catharine's family moved to York County, Pennsylvania where her five siblings were born. In about 1771 she married Peter Quickel, the son of Johann George and Anna Maria "Ursula" (Mueller) Quickel. Peter died just a few years later in 1776 at the age of 29. They had three children:
