Soms komt in het vuurstedenregister de vermelding “eesten” voor. Eesten is het stoppen van het kiemproces door verhitten met warme of hete lucht. Op grote geperforeerde platen worden de ontkiemde gerstekorrels uitgespreid. Vanaf onderen wordt lucht van een bepaalde temperatuur door de mout heen geblazen. Als het vochtgehalte zo rond de 8 tot 10% ligt, wordt de temperatuur opgehoogd. Dit proces noemt men het afeesten. Hierbij daalt het vochtgehalte tot zo’n 2 à 4%. Hoe hoger de temperatuur en hoe langer wordt verhit, hoe donker de mout wordt. Men spreekt nu ook niet meer over groenmout, maar over mout. Een voordelig effect van de verhitting is, dat deze grondstof, het mout, langer houdbaar blijft.
