Joseph was a mill wright and canal worker. He was apprenticed to a millwright in 1788 in Loudoun County, Virginia. He married Mary Milburn in Loudoun County, Virginia, on 17 Dec 1803. He was taxed in 1804 and 1805 in Loudoun County, Virginia.
Deed Book M, p. 494, for Morris County, New Jersey, places Joseph in Lanceville, Illinois in September 1806 and in Muskingum County, Ohio, in November 1806 when he sold his inherited land in Roxbury Township, Morris County, NewJersey, to his uncle Burgon Montanye. He joined his uncle Burgon in Licking County, Ohio, in 1815.

"In the year 1820 Joseph Mantonya erected waterworks on Auter creek, a little above the site of the old Ford mill, for the purpose of manufacturing sickles and augers, to which he attached a mill for grinding. This establishment was of great value to this county at that time. Mr. Montonya was a good workman, and the demand for his sickles was large, as the small grain in those days was all cut with the sickle. This manufactory was successfully carried on for several years, until Mr. Mantonya left his shop to become a contractor in building the Ohio canal. It then remained comparatively idle until the spring of 1830, when it was repaired and again put into successful operation by Mr. Mantonya and Samuel Park. In a few years, perhaps in the year 1835, it was sold to Phinehas Ford and his son Benjamin, who converted it into a sawmill."
The census of 1820 and 1830, taken together, imply that Joseph had a total of eleven children, six boys and five girls. Some of these could be Huddleston stepchildren who lived in the household after Mary Slack Huddleston married Joseph in 1827.
Both Joseph and his first wife Mary Millburn Mantonya are buried in Hall Cemetery, Licking County, Ohio.
